White Bean and Celery Cream Soup

 

So these days, I’m either making soups, roasting something, caramelizing something, or melting chocolate.  Tis’ the season, right?  I found another gem in Homemade Winter of an incredibly filling, rich soup loaded with protein, fiber and veggies.  As a pureed soup, Olive had no problem drinking it from her little soup cup, and as I’ve said before, I think soups are THE easiest and most efficient way for toddlers to try a myriad of vegetables, flavors and colors.  And how easy they are to convert to “baby food”!  Back when I was making baby food, I would make a batch of vegetable soup, and after pureeing it, I could fill nearly a dozen jars.  Try buying a dozen jars of baby food in the store vs. a butternut squash and some chicken stock.  The price difference says it all!

Olive has been very into “sauce!” lately, no matter what it is.  She covets it, even though she doesn’t like any of it except “tomato sauce” (ketchup).  Any time we have Srirracha or Tapatio or mustard – whatever – she wants it.  So we give her tastes of anything she requests.  She usually raises her eyebrows and fusses a bit, especially if it’s spicy, but hey, that’s how she learns!  This soup has a smoky chili oil drizzled on top, and I thought it was a genius addition.   I didn’t have any celeriac, and it was one of those super cold days where I didn’t want to run out to the store for one ingredient, so I used the celery I had in my fridge, and I thought it worked great.

Creamy White Bean Soup* – START THIS SOUP A DAY AHEAD
makes a lot

1 1/2 cups dried white beans
1/4 cup olive oil
2 leeks, white and light green parts, washed well and finely chopped
4 stalks of celery, diced
2 cloves of garlic, minced
6 1/2 cups chicken or vegetable broth (I used chicken)
2 tsp  minced fresh rosemary, or 1 tsp dried
salt and ground black pepper
juice of 1/2 lemon
drizzle of chili oil – I bought mine at an Asian Mart, but I think you could find it in the Asian section of any grocery store

Soak the beans overnight in enough water to cover them by 2 inches.

Heat the oil in a large saucepan or stock pot and add the leeks and celery.  Saute, stirring constantly, until the leeks are soft.  Add the garlic, stir for a bit, and then add the broth.

Drain the beans and add them to the saucepan.  Add the rosemary and season with salt and pepper.  Slowly bring to a boil.  Reduce the heat and let the soup simmer over low heat with the lid partway on for 2 hours.

Puree the soup with an immersion blender or in several batches in a regular blender (why on earth haven’t you bought an immersion, yet?!)  Stir in the lemon juice and taste for salt and pepper.  Serve hot with a drizzle of chili oil or Srirracha would be great, too!

Flourless Double Chocolate Cookies

I’m going to post about chocolate, again on Saturday, most likely.  Because a friend from Matt’s old job just paid us $25 to bake him something for their company Christmas party.  We thought it would be last Friday, so I made these flourless chocolate cookies.  You can win any gift exchange or White Elephant situation with chocolate.  Unfortunately (but fortunately) the party was cancelled due to ice and so I had to make a different chocolate indulgence today.  It was hard, but I got through it.

These cold days beckon rich, dark, warm chocolate.  One of my favorite things in the cooking world is the moment when you’re stirring hot cream into chocolate chips and you think it’s never going to melt the chocolate, but then suddenly, a rich pool of blackness forms in the center of the bowl and in about ten more seconds, the whole bowl is transformed into ganache.  This happened, today, as I was making the ganache to go on top of my little brownie creation (to be posted this weekend!) and I found myself grinning like an idiot.  Transforming something good into something even better is one of the perks of working with chocolate.  It never fails to please.

Like these little cookie gems!  Flourless, fudgy, dense, chewy and melty bits of chocolate throughout.  My one and only friend with celiac disease will be so happy 🙂 You’re welcome, Heather.  I can’t imagine a world without flour, but if I had to, these cookies would be repeat visitors to my kitchen, for sure.

Flourless Chocolate Cookies

Flourless Double Chocolate Cookies*

makes about 2 dozen
2 1/4 cups confectioners’ sugar
1/4 teaspoon salt
1 teaspoon espresso powder, optional but good
1 cup Dutch process cocoa powder
3 large egg whites
2 teaspoons vanilla extract

Preheat the oven to 350°F. Lightly grease two baking sheets. Stir together all of the ingredients till smooth. This is hard.  The batter gets so gluey, you will be certain you have made a mistake.  You haven’t.  Just keep stirring.  If I could do it over, again, I’d use a stand mixer. Scrape the bottom and sides of the bowl, and stir again till smooth.
Drop the batter-like dough onto the prepared baking sheets by heaping tablespoons.
Bake the cookies for 8 minutes; they should spread, although mine didn’t much, become somewhat shiny, and develop faintly crackly tops.

Remove the cookies from the oven, and allow them to cool on the pan.

Cheesy Cauliflower and Rice Bake

I always look for interesting sides to put with lunch and dinner every day.  It has been a challenge for me as the typical American cook to think of vegetables as a main component to meals.  For most of us, vegetables are exactly as we call them – a side dish (a side thought!) and we obligingly scrounge a bag of vegetables from the freezer to make our meals “complete” when we very rarely enjoy those components and most of them, if we are honest, get put in a leftover container and saved until we no longer have guilt about throwing them away.

Maybe this is just me.  I’ve wanted and tried this year to think of vegetables as the main component and meats and carbs as a side dish.  To balance the plate in the opposite direction.  This. Is. Hard.  I will be the first to admit that I know how to cook meats, starches and carbs MUCH better than I know how to cook a vegetable.  But I’m trying!  And I’ve looked to cuisines that tend to focus on vegetables as main dishes for inspiration.  Indian cuisine is wonderful for this approach, but even I tire of the cumin/cardamom/curry combination of flavors pretty quick.  There needs to be a balance to the approach of getting more vegetables on your dinner plate, and so for me, I’m taking winter as a wonderful excuse to make some slightly more indulgent and comforting vegetable dishes to get me in the habit of seeing them as the star of the show, instead of a side act.

Speaking of winter: I am in love with a new cookbook.  Well, I suppose it isn’t exactly new, but it’s new to me, and it’s called Homemade Winter by Yvette Van Boven.  I absolutely love when a cookbook has recipes listed by seasonal availability.  This cookbook is ALL about winter – sure, winter in Holland, but STILL!  Most winter vegetables in this hemisphere are available and relatively fresh no matter where you reside, and so this cookbook has introduced me to a season of cooking that has previously been nothing but soups and stews and squash.  Goodness, how many times can I eat squash?!

Enter: cauliflower and rice baked with swiss into a creamy but not-too-heavy dish.  I made this yesterday for our lunch and it was the main component.  In her cookbook, Yvette calls it a risotto, but I didn’t have arborio rice and so I made it with what I had – plain ol’ white, short-grain rice – and it worked beautifully.  I love a recipe that is accessible and works, no matter what you have on hand.  A lot of home cooks don’t have arborio in the pantry, yet most people have regular white rice!  The only splurge for this dish was some good Comte cheese, but I believe it could be just as flavorful with nearly any cheese you have in the fridge.

We loved it – it was warm, filling and satisfying as a main dish and perfect for a freezing day like today.  In fact, I turned the leftovers into cauliflower rice fritters today for lunch and served them along side a white bean soup I will blog about very soon, and it was an awesome lunch!  Hope you all stay warm, today and have an extra cup of coffee with me!

Cauliflower & Rice Bake

Cheesy Cauliflower Rice Bake
serves 6-8 as a side or 4-6 as a main

1 small head cauliflower
1 TBS olive oil
1 large onion, diced
2 garlic cloves, minced
1 cup shredded cheese such as Comte, Emmentaler or Gruyere – would work with any hard cheese, though
1 cup of white, short-grain rice
2 3/4 cups chicken or vegetable broth
1/2 cup panko or plain bread crumbs
drizzle of olive oil

Boil the cauliflower for 10 minutes until tender.  Drain and set aside.

Preheat the oven to 350F. Heat the oil in a large skillet (12″ at least). Add the onion and saute for about 5 minutes.  Add the garlic and cook for one minute more, then add the rice and stir to combine.  Saute all this for another 2 minutes or so.  Add the broth and bring to a boil.  Stir in the cauliflower and cheese and cover the skillet with a lid and bake in the oven for 25 minutes until all liquid has absorbed.

Remove from the oven and let sit for 5 minutes before uncovering.  Sprinkle the bread crumbs and drizzle the top with olive oil and bake until the breadcrumbs are toasted, or just stick it under the broiler for 5 minutes.

Serve in bowls with lots of cracked pepper!

S’mores Pie

I had a wonderful Thanksgiving and I hope you did, too!  I got to spend it with my whole family!  Both my brothers came down with their children and with them and my parents, there were 16 of us bedding down in our old childhood home! I got to see my grandmother and my sweet Aunt Mary, too!  I really don’t think I’ve seen that much family in one weekend in several years. It was good for the soul and I don’t feel like I even overate as much as I usually do, which enabled me to enjoy the heck out of this pie I created on Friday night.

S’mores pie!  When we showed Olive s’mores for the first time this summer, we made them with dark chocolate.  I loved the balance the dark chocolate gave to the super sweet marshmallow and graham cracker.  So when thinking of a pie to make for Thanksgiving, I thought of doing the darkest chocolate pie I knew how to do and topping it with my favorite meringue and then torch the heck out of the top.

Best.  Chocolate Pie. Ever.

Seriously, if you want to win some kind of chocolate pie award, this is your pie.  Make it with a traditional crust and serve it with soft whipped cream and that is all you’ll need for ultimate bragging rights.  I nearly skipped out on the meringue, but I wanted that dramatic torched effect so I went with it.  I think if I were to do this pie over, I would give it more s’moresy flavor by just dumping a bunch of marshmallows on top and burning them to a crisp.  Because I’m that s’mores gal – the one who likes to eat slightly sweet bits of char instead of marshmallows.  I’d say most people aren’t like this or don’t have a coal deficiency or whatever, so I erred on the side of not-too-burnt.  The results were great and I will definitely make this pie again at Christmas!

S’mores Pie

2 eggs, beaten
1-5 ounce can of evaporated milk
1 cup white sugar
1/4 cup brown sugar
2 TBS cocoa powder
1 TBS instant coffee granules
3.5 ounces dark chocolate, chopped
1/4 cup butter
2 TBS corn meal
For the crust:
1 and a half packages of graham crackers, crushed fine (12 large)
2 TBS sugar
4 TBS butter, melted
2 TBS water
pinch of salt
Preheat oven to 350 degrees.  Combine the crushed graham crackers, sugar, salt and butter until it’s well combined.  If it doesn’t hold together when you press it between your fingers, add the tablespoons of water.  Press into a 9″ pie plate and set aside.
Combine the eggs, evaporated milk and sugars until smooth.  Put the cocoa powder and instant coffee in a small cup and add a tablespoon of water and whip it into a paste.  Whisk this paste into the egg/milk mixture.  Melt the dark chocolate and butter together in a microwave at 30 second increments, stirring after each time until completely smooth and glossy.  Add the chocolate and butter to the egg mixture and then whisk in the corn meal until smooth.
Pour into the pie shell and place your pie on a rimmed baking sheet and bake for 45 minutes to an hour, until the middle doesn’t jiggle anymore.  Let the pie come to room temp before making the meringue!
For the meringue:
5 egg whites, room temp (room temp is important)
1 cup of sugar
1/3 cup water
Place the sugar and water in a small saucepan and bring to a gentle boil till the temp reaches 250 on a candy thermometer.  While it’s boiling, put the egg whites in a mixer at medium speed and beat with a pinch of salt until soft peaks form.  When the sugar is up to temp, remove from heat and while the mixer is going on medium, drizzle the syrup in a very thin stream until completely incorporated and then increase speed to high and whip until the bowl cools down.  This takes a while so be patient.
Assemble!
Dump ALL the meringue on top of your ROOM TEMP pie and with a blow torch (such a great addition to any kitchen) or a dainty creme brulee torch (not as fun) torch the meringue until evenly browned.  If you have neither, you can brown it in the oven under the broiler but you have to be VIGILANT as to not burn the meringue.  A broiler works scary fast.

This is the Super Bowl of a cook’s world.  I love this holiday and I certainly don’t want to skip over it in a rush to get to Christmas!  Since Matt and I began developing our love of cooking almost 10 years ago, we have looked forward to Thanksgiving a little more each year.  I think, in a way, we are trying to create our own family traditions this year, with a little family of our own.  We realized with a hint of despair the other day that we may not get to host our own family Thanksgiving until our children are in college!  So we decided that along with trying out new recipes each year and saving some old favorites, we’d have our own Thanksgiving at our home, before heading out of town to spend time with our extended families.

This was our Pre-Thanksgiving!  I printed off each recipe and kept the stack on our counter to refer to as I did my prep.  I couldn’t sleep Monday morning, so I got up around 5 and started chopping leeks, mushrooms and Brussels sprouts.  We had a few friends over who each brought an amazing pie and some blue ribbon biscuits from our friend, Rod, who still won’t share that recipe, almost 20 years later.  🙂 I didn’t get pictures of everything, nor was I trying to do a post on any one particular recipe.  I just took some pics that I could and let the rest go – this was about having a great time with friends and not about styling a plate of food. However, I did get links to the recipes for everything we did.  Everything turned out really fantastic – loved the Brussels Sprouts and the Cheesy Squash Cassrole and that cocktail made everything just a little more sparkly. 😉

A Blueberry Morning

It’s super cold – winter blew in last night leaving everything gray and bone-chillingly cold.  We are having a lazy day inside and all I can think about are these warm blueberry muffins with cold butter and hot blueberry syrup soaking into every crumb.  My mom made this combination quite frequently for us, growing up.  I associate them with cold, Sunday mornings. We needed something rather fast while getting ready for church, yet warming at the same time.  Something Mom could pop in the oven and then have time to get ready, herself!  She would boil the blueberry liquid and add a little sugar to make a wonderful blueberry syrup to pour on top of the muffins.  That was always my favorite part.  Just HOW blue can I make this muffin?

So when I saw a can of wild Maine blueberries in the grocery store, my mind went instantly to these muffins and I had to make them for us.  Mom’s were better, but that’s to be expected 🙂  Stay warm, today, Lubbock!

Blueberry Muffins with Butter Blueberry Muffins with Blueberry Syrup

Blueberry Muffins with Blueberry Syrup*
makes 12-16 muffins

12 1/2 ounces cake flour
1 teaspoon baking soda
2 teaspoons baking powder
Heavy pinch salt
1 cup sugar
1/2 cup vegetable oil
1 egg
1 cup yogurt
1 1/2 cups blueberries (fresh, frozen or I used a can of blueberries packed in water – that part is important if you use canned)

Preheat the oven to 375F. Line 16 muffin tins with papers and spray the papers with non stick spray.  Whisk the cake flour, baking soda, powder and salt in a large bowl.  In another bowl, whisk the sugar, oil, egg and yogurt until smooth.  Add the dry ingredients and stir just until combined.  Reserve the juice that comes in the can of blueberries and put it on the stove in a small saucepan with 1/4 cup sugar and let it come to a boil.  Reduce the heat and simmer during the baking time of the muffins.

Fold the blueberries into the batter and divide among the muffin cups.  Bake for 20-25 minutes, until the tops are golden brown.  Remove and remove from the pan, letting them cool upside down for about 10 minutes.  Split, add a copious amount of salted butter and drown in blueberry syrup.  Cheers.

Homemade Creamy Tomato Soup

It’s a beautiful, cold fall day!  Yesterday it was dark and very cold and it called for a cup of soup in hand and little else.  When Matt makes us his pizza on the weekends, I am always left with about 9/10ths of a can of tomatoes and inevitably during the week, that gets turned into tomato soup.  I keep adding a spice here or there, fresh basil if I happen to have it, and no matter how I tweak it, it always turns out great.  For this version, I had some stale bread from Matt’s weekly baking that I turned into croutons. I hate wasting his bread, even the stale stuff, so it gets turned into croutons, breadcrumbs or savory stuffings every time.  The good thing about breads that are as plain and rustic as his, is that they don’t mold very quickly – they just dry out.  Perfect!  The croutons were tooth-shatteringly hard, but after a few minutes in the soup, they were extremely flavorful little sponges.

Happy Fall – it’s in the air!  It’s marvelous!  There’s a faint scent of wood burning in our neighborhood and it’s a treat to get to walk outside.  It’s a treat to be alive, today, really.  Tomorrow doesn’t exist, don’t spin all day for it.  Yesterday can’t be changed, don’t regret it.  Live today and today only!  Yesterday I recalled one of my favorite quotes,“Those who make the worst use of their time are the first to complain of its brevity.”
― Jean de La BruyèreLes caractères.  This quote challenges me to not waste my day thinking about what all I have to do, or what all I didn’t get done yesterday.  It helps me to not sit around wasting time on my phone and it helps me to realize that time with 1 and a half year old Olive is extremely rare and won’t be here for long.  So we make a mess drinking our soup and we laugh and I try to take her up on her offers while I’m working to, “mama pay? mama do somting?” a little more frequently.

Homemade Tomato Soup

Creamy Tomato Soup from Scratch
serves 3-4

1-28oz can whole tomatoes (I love Cento brand!)
1 tbs red wine vinegar
1 garlic clove, crushed
1 tbs olive oil
Whatever herbs you like – dried thyme, rosemary, sage, oregano – they’re all good and they all work.  Stick to about a teaspoon.
A splash of cream – eh, if I had to measure, I’d say 1/8th of a cup
Salt and fresh cracked pepper, to taste

Put the olive oil in a medium saucepan and add the garlic clove.  Saute over medium heat until starting to brown.  Add in the entire can of tomatoes, red wine vinegar, herbs and stir to combine.  With an immersion blender, pulse until completely blended and smooth.  Add in the cream, stir to incorporate and adjust the seasoning with salt and pepper.  Let it simmer on the stove for about 10 minutes and serve hot with crackers, croutons, or the classic grilled cheese.  Enjoy!

A Week in the Life

I did something different this week.  All last week, I took very low-key, not styled, not properly lighted pics of most dinners we had (otherwise known as iPhone pics), as well as a few breakfasts and side dishes.  I was asked by a couple of people to talk about the more day-to-day things we eat.  So I stripped everything down of any pretension and decided to show you exactly what we ate for a little over a week.  If you will hover over each image, you will see a description.  Lunch pics are not mysteriously absent – we eat leftovers every. single. day. for lunch and I really only took a pic of one of the lunches because they are literally a repeat, usually, of the night before.  My goal for the end of the week is to have a clean fridge, and for the most part, I achieve that goal.  And the other absent pics are from when we went out or had dinner at our church or whatever.  I vowed a while back to stop taking pics of my food at restaurants.  You should do everyone a favor and do the same.  Some recipes make a large portion like the brown sugar ham – made a TON!  So I used it in savory crepes yesterday for lunch, diced up with cheese and chives.  Voila – a simple lunch and CHEAP.  Breakfasts are really low key.  I make Olive some type of oatmeal about twice a week, yogurt at least once or twice, the other week days are usually “baby beetos” (scrambled egg burritos) and then Saturdays, I nearly always make something a bit more fun and indulgent like waffles, pancakes, crepes, whathaveyou.

Some of these pics look downright unappealing.  But in reality, this is what our plates look like!  Never picture-perfect, bad lighting in the dining room, no one styling our food, etc.  I plan on blogging about a few of these recipes (the pea puree – oh my word, it was awesome), but for now, I’ll leave you with exploring the descriptions and getting a peek inside a typical week around here!

Sweet Potato Pie with Butter Rum Sauce

Last weekend we were invited to our friends’ house for a dinner party.  The theme was Cajun and so Matt made a humongous pot of gumbo, which has been many meals this week and is very good, and I made this sweet potato pie that was obliterated by the end of the night and I sadly didn’t have any leftovers for breakfast.  I’m actually glad it got gobbled up because that’s instant portion control. I shared one slice of this pie with Olive, she ate most of it, and I enjoyed every bit.   I had a lady at church last night say, “I’d love to live in your house so that I could eat your food, but then I’d be 7,000 pounds.”  I’m not exactly sure this blog is conveying the truth if that’s the overall sentiment!   I’m also not sure I’m conveying properly the amounts of these foods I DON’T eat.  I made three batches of The Cinnamon Rolls over the course of two weeks and I think overall, I ate two whole cinnamon rolls, maybe three.  But it wasn’t a couple each batch, or “the whole pan” like a lot of people swear they’d eat if they made it themselves at home.  I don’t think people give themselves enough credit.  Of course you wouldn’t eat the whole pan.  How on earth would that be enjoyable to have a stomach ache because of something you baked?  Maybe that’s the whole problem with portion control with indulgent foods.  People get a feeling like they need to “eat the whole thing” to pretend like it never happened, to remove it from sight and further temptation.  They feel “bad” eating it in the first place and so why not eat it badly?!  Whatever the reason, it’s a wrong mindset.  And one I hope to never impose on Olive-that rich foods are somehow bad and we should feel guilty or gain 7,000 pounds for eating them on a weekly basis.

During the week, we eat simply.  Bowls full of beans, rice, sauteed chard and potatoes and steamed fish, beet pasta, roasted carrots, butternut squash soup-that was this week.  These do not make the most riveting blog posts, nor do I always remember to take pictures of “regular” meals.  Perhaps I should!  Maybe it would help balance out peoples’ fear of the occasional pie or butter sauce.  My hope for myself and anyone who loves to cook is that we find a good balance and that we effectively remove all GUILT from eating.  Find a way.  Whether that’s eating smaller portions or just meals made from fresh, good ingredients that couldn’t live in a box if they tried.  Maybe if that was the norm, and eating at home was what we did 6 days out of the week, than a crazy good, gooey brownie on the weekend or a night out at a restaurant would seem like the treat it is, instead of the impending portion of guilt that it’s come to be.

This pie was light and fluffy almost like a souffle.  It wasn’t overly sweet and so it went AMAZINGLY well with the butter rum sauce I decided to make at the last minute.   I think it would be perfect without the sauce, but it was the gilding of the lily for a festive occasion like a dinner get-together.   I also adore the website I adapted this from – The Gumbo Pages!  That is the best website name, possibly ever.  And the recipe was clearly from someone who never had to write it down.  A lot of “approximate” measurements and “about this much” kinda talk.  I love the nature of a recipe like that.  And I love that this recipe came from someone with the nickname “Pie Man.”  Honestly, how can you go wrong with that combination?

Sweet Potato Pie with Butter Rum Sauce
makes one, 9″ pie

3 cups cooked, peeled and mashed sweet potatoes (about 3 medium potatoes)
2 eggs
2 tablespoons melted butter
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
1/2 cup cream
1/2 teaspoon lemon juice
2 teaspoons vanilla
dash of salt
1/2 cup sugar

Boil the potatoes whole in plenty of water (covering them by about two inches) for about 30 minutes, until tender all the way through.  Peel them after they’ve cooled a bit and give them a rough dice.  Mix the potatoes in a stand mixer with the paddle attachment until they are smooth and very few lumps remain.  Mix the eggs with the cream and spices, lemon juice and vanilla until smooth and gradually mix it into the potatoes.  Add the salt and sugar and let the mixture blend on medium for about 5 minutes. Pour filling into UNbaked 9″ pie shell, bake for 40-45 minutes at 350-325.  Serve with butter rum sauce or whipped cream!

Butter Rum Sauce

1 stick of butter
1/3 cup heavy cream
1/2 cup sugar
a few pinches of kosher salt to taste
2 tbs rum

Let the butter melt with the cream and sugar and stir until the sugar is completely dissolved.  Add salt until it tastes right to you – let it take some of the sweetness away and give it some depth.  Add the rum and mix well and serve!

Mexican Chocolate and Horchata Risotto

I really can’t think of a better day to make this dish than today.  It’s cold, cloudy and all I want to do is eat complex carbs, sprinkle cinnamon on them and then take a nap.  The other day, I found a recipe in my cute little French non-diet diet book for a simple chocolate rice pudding.  I started improvising and adding cinnamon.  Then more cinnamon.  Then some cream, then more vanilla.  It started tasting exactly like horchata, my favorite Mexican beverage, and I was happy.  I even thought, “Why ruin this horchata by adding the chocolate the recipe calls for?”  So I ladled out half of the rice pudding and added the chocolate to the other half.  Woah.  Insanely good.  The intense cinnamon and vanilla, mixed with the dark chocolate was a revelation.  Such a depth of flavor you wouldn’t really expect from something as seemingly bland as a rice pudding.  It was amazing.  And with just a little extra cream to loosen up the consistency, it was exactly the way risotto should be, only sweet!  Dessert risotto – you heard it here first, folks.  I think it should be a “thing” if it isn’t already.  It’s going to be a “thing” in this house, at least!

Mexican Chocolate Risotto

Horchata/Mexican Chocolate Risotto
serves 4 as a dessert

2 cups milk
1/4 cup sugar
Pinch of salt
1 cup Arborio rice (this is risotto rice that plumps up and absorbs a lot of moisture.  I’d really recommend not using any other kind)
1 tsp vanilla bean paste
1 tbs cinnamon
– then, for Mexican Chocolate, stir in 3 ounces dark chocolate chips (the darker the better – I used 70%)

Pour the milk, sugar and salt into a saucepan and bring to a boil over medium heat.  Add the rice and cook for 20 minutes, stirring occasionally, until the milk is absorbed.  You may need to add  a few more splashes of milk or cream to keep the rice creamy.  It may take more time and more milk in order for the rice to not be crunchy anymore.

Stir in the vanilla and cinnamon and taste.  Revel.  Feel happy.  Then, when you’re ready, add in the chocolate to the entire batch or just half, like I did.  Stir until fully melted and incorporated.  Sprinkle with extra cinnamon and a sprinkle of cayenne if you dare.  Serve with a warm cup of hot chocolate and be sure you’re wearing fuzzy slippers.
